Dinner for the boo. <3

Last night I made pan seared salmon, cannellini beans with shallots and leeks, asparagus & a salad… and my homemade tartar sauce (that’s the pink stuff).  It was yummy… I’m going to try and cook at least 4 nights out of the week, to save money, but also to be healthier.  I didn’t even miss the carbs in this dish!

I don’t necessarily ENJOY cooking, but I LOVE feeding people.  Tonight, I’m thinking of making grilled pineapple shrimp wraps.

Now, I just have to work on getting her to eat my other substitute (I hate the word imitation) meat products!
